Albert Dupuy, a herbalist and perfumer living in the heart of Paris, founded La Cornue in 1908, and ushered in a revolution in elite cooking. Albert had a simple question, "What does it really mean to cook?" and so he developed his oven with a vaulted design, ushering the hot air around the food, rather than suspending it on a rack over a fire. Taking advantage of the new natural gas being used in Paris, Albert created the Rôtisseuse-Pâtissiere La Cornue (La Cornue Roast and Pastry Cook), which incorporated his circulation design, and so the convection oven was born.

Today, La Cornue products are sold in 40 countries, but at its heart La Cornue remains a craft manufacturer, making all of its products to order, by hand, and by a select staff of 60 craftsmen. Each range, being accompanied on its journey from inception to the finished final product by the same craftsmen in pursuit of perfection.
